i am louzhu. i have never applied for visa in beijing, and cannot answer your question. there was only one window for h1b interview in guangzhou. the vo did ask me some detailed questions but i was not checked at the end. good luck
if you are already employed in the university, the international office of your university will prepare an employment verification for you. I would suggest you talk to your HR

家住湖南，所以广州会近很多。
应该没有地域限制
但是哪个更好通过不会被 check ?
