There would be a lot of Chinese on the same plane. Let your parents talk to some nice Chinese fellows and I believe every reasonable person would like to offer help.

in addition, it's better to prepare some useful coversation in both English & Chinese for your parents such as the purpose of their visiting (show it to the immigration officer) and no claim needed (to the Custom officer), also ask for help to switch flights etc.

passport+visa should be enough. however, just in case, bring all the supporting materials of yours, such as your I20 or I797 copies. etc
No, physician exam is not required.

anyway, do not worry, as long as they fly from China to NYC, there would be tons of Chinese in the same plane or airport.
